Stopped by my dad’s house and he was smoking some fish (steelhead he caught) on the traeger. Used a smoke bomb. Looks good, not a fish person so didn’t try it.

10 lb butt. 11 hrs. No smoke flavor but very tender.

My smoker runs 30-50 degrees hotter... Figured it out with my meater so last night was first big cook with real temp.

I am notoriously bad at taking good food photos. Snapped a quick one the other day though. This loaf turned out pretty delicious. Might use a touch less thyme if I do it again. Will also use a different pan as the bottom of the meat became one with the mesh one I had.

Chateau Briand cut of the tenderloin. Smoked and reverse seared. Made compound butter using Meat Church "cowboy butter" recipe.

What grill brush are we using?

I have a grill rescue brush. It works okay, but if there is a lot of buildup on the grill, I still end up using a wire brush.

I stopped using wire brushes since I noticed the bristles were falling off. Bought some orange ones made out some fiber

17 lbs guy. Sams butchers get a D- on this one. They cut the mohawk, but too deep. Created a canyon on the fat cap side. I wrapped a little early because i wanted to protect it from drying out.

Wire brush all my grills and smokers for over 30yrs, I still havent found a wire bristle in my food, just saying
