We went meat shopping for Xmas eve dinner. The family all voted and decided to do bone in prime roast. At Costco they $15-$18/lb!!?? $200 for a nice sized one. We buying from the jewels. Need to buy $25 in grocery…pft!

Trying to decide if I should smoke or just cook it in oven. I am smoking baby back ribs too so the smoker will be smoking.

Just did a bone in prime rib last night for folks and it was fuckin excellent.
My technique that I stole from one of my guys is:
Pull from package, rinse, pat dry and season - I used hardcore carnivore
Then I put it in the fridge for a few hours, then pull and let it start to warm to room temp, it seems like this makes the seasoning really absorb nice.

Smoker at 150, smoke meat till it's 110 internal. Pull, tent, coast till it peaks and starts falling off. Then stick it in a 500* oven until it gets up to 130-132.
I didn't take any pics done, beers got me but dude. It was legit.

I cut the bones off and braised them in a marinara sauce i made on saturday that's going to become the meat sauce for the pasta thing im making

Today was the nail in the coffin for me with brisket. I am 100% absolutely done trying to make one. Absolutely fuck all of that.

I used the meater and it tells me my smoker is actually 20°-65° off at any time. So that explains years of shitty smoking.

I had Temps OK for the brisket then all of a sudden I reprobed both and they were 15-20 lower again. Completely frustrated, turned out like shit, again.

Done.

i mean, i'll catch heat for this but i honestly prefer braised brisket over smoked.

Brisket isnt easy at least on non pellet smokers imo. As mentioned mine are always hit or miss, although I think the last couple have been better.
My brother has the Weber Smokefire and his briskets are always on point. I think your smoker may be the issue as between 20-65 is a huge difference.
I'm waiting on some real world feedback on below. One guy I talk to is sponsored by them, so of course he says its the best thing ever lol. But once reviews start rolling out and if they are good, I might bite the bullet on this.

i wound up getting the thermoworks smokex2 setup with the billows as i signed up for coups and finally got a super solid coupon to make it make sense.

really nice quality and it worked fucking incredibly well.

my house it's always fucking windy as fuck at and especially yesterday it was windy as absolute fuck and it kept my weber summit kettle at 225 all fucking day long. bumped it to 250 later in the day and went right to temp. i tossed some half off beef ribs from jewel on yesterday just as a trial run and they turned out fucking delicious. even opening the lid, it'd get right back to temp perfectly fine.

bottom vent totally closed, upper vent barely open.

instructions said to light half a chimney of charcoal, and then put it on top of a bunch of unlit. i did just that with jealous devil chunks and it went fucking awesome.

as for coupon- just sign up for emails from them. it took like 3 weeks for me to get a 20% off everything one or maybe it was 20% off sitewide but they seem to go on sale here and there.
