Nice.

I did about the complete opposite of BBQing today. Made a shrimp and scallop ceviche with tomatoes, avocado, red onion, jalapenos, orange juice, EVOO, salt & pepper and cilantro.

You don't cook the shrimp/scallops at all. Cut them up, put them in a non reactive bowl and dump around 6 limes worth of juice in, enough to cover the meat. Put it in the fridge for around 3 hours and the acidity in the lime "cooks" the meat. Then you add the other fixin's and serve in wide drink glasses with tortilla chips. I made Paula Deen's cornbread to go with it.

This was the first time I made this. Should have taken pics but had people over and forgot. It tastes awesome if you want a break from the grilling game and can find the shrimp/scallops on sale. I thought I made plenty but everyone had seconds so it disappeared. Probably wouldn't keep well anyway so it's good we finished it.

Here's the recipe I sort of followed. Tweaked it a bit, to taste, of course.

I let them sit on the top rack 20-30 minutes with 1 flip, then I turn all burners to kill and sear.

I was having issues keeping these pellets smoking, so they didn't get a ton of flavor, but were good.
The steaks I did, we amazing tho.

I really need to get a torch.

I use the a-maze-n pellets in my electric smoker. Best way I've found to get them going is hit them with a propane torch, get a good flame going for 5 or 6 minutes, then blow it out and let it sit for a few more to make sure the smoke is consistently coming off.

I've gotten 10+ hours of smoke.

i fill the tube about half way, and put it directly on a burner rail till i see flames. i blow it out after a minute or two, then place it on the rack above one burner set to low to keep heat on the tube, usually gives me my 30-40 minutes of smoke.

usually works out really well. not sure if this time i blew it out too soon or what, but i had to keep playing with the burner temp to keep it going.

like i said i really do need to get a torch. just keep forgetting every time i am at the store.
