First car - project suggestions?

TCG! I'm wondering what my first project car will be with my son. I don't want a straight race car, but a little power would be ok. Nothing with too much power, though. Added benefit if the car is older bringing down insurance costs. Anyways, enough with the boring stuff.

What suggestions do you guys have? Would be cool if the car was running at first, but might make a good candidate for a LS swap later after he can save up some pennies.

280z's are great just really search for one without rust unless you want to get into bodywork. Parts are somewhat easier to find then most other datsuns of that vintage.

I would pay money to see Eagle fit into the Rx7 though. Maybe it is different without a cage but it was rather tight fit for me.
