well I did two 3lb roasts actually, and they turned out fucking amazing.

I trimmed off some (there was a substantial amount) of the excess fat yesterday morning, rinsed off and then patted dry with paper towels.
Then I put some olive oil on each and did a steak rub on each one all over, and then let them sit out in a pan on my cooktop for about 4-5 hours getting to around 58* internally.
I then smoked them in the pan they were sitting in at around 175* for 45 minutes- internal temps reached about 75* during this time. I pulled them off the grill and then seared all sides in garlic/olive oil.
Then I put them on a rack above a pan to catch all the drippings to use later.
I then set my traeger to 300*, once it hit 100* I backed off to 275*, once it hit 120*, I backed it down to 250* and then turned it to smoke at 130* (mainly because the meat cooked a LOT faster than expected and I was still an hour and a half away from when I told people to be over )
I let them sit at smoke for about 15 minutes, temp hit 132* or so, I tinfoiled them and took them off and let them sit in my oven on a platter (not on or anything) for about an hour- temps hit 135* now.
