I'm curious. Why do people hide meat under cheese to get soggy and not crispy
Most meat goes under the cheese, but dependant on the meat. It's so that it gets cooked and not burnt to shit.

Like with sausage, you put it on raw and let it cook with the pizza. When it greases out, it gets into the sauce to add flavor, as opposed to sitting on top of the cheese making a grease pool.

I prefer pepperoni under for similar reasons. It also dries out and gets flaky and gross on top. If you get the thicker cup and char stuff then it cooks properly, but again, turns into an absolute grease pool on top. Which runs under the pizza when cut and totally ruins the integrity of the crust.
