Pizza night tonight, and another deep. I had 2 thins also, but forgot to take photos as these are coming out 1 at a time and I was cooking still.

These work much better when you use slices vs shredded cheese. This one was awesome. Needed slightly less sauce, which I'm still working on proportions.

Tried a new recipe today. The crust was INCREDIBLE. Probably the best I've made. The dough as hard AF to work with though. It rolled out poorly, wasn't even, and had a bad spring back from max size. I'm not sure what to do about that. I tried to make a 2nd one tonight and the dough stuck to the peel, finally released and missed the stone and went all over the oven. Big fail. So I gotta work on my technique. The flavor was amazing though.
