I cheated and used canned jalapeños already sliced and diced. Same with the red onion - bought it already chopped up. Can’t wait to have the leftover tonight for a side dish!

What is your recipe for hollandaise

I use the regular method. Whisk some egg yolks with a tablespoon of lemon juice. Put it on a double boiler and slowly pour in a melted stick of unsalted butter while whisking vigorously. Whisk until it firms up to good consistency. Add salt and sprinkle with cayenne pepper. So much better than the store bought Hollandaise.

sounds good..i always make a good steak/chicken tortilla soup w/leftovers...no waste + its a quick lunch with added ingredients...chicken/base etc...
El Milagro chips are a +...its soup/chili/crockpot season once again...cheers man
