I'm cooking a cast iron pan right now. It needed to be washed with water so I'm drying it in the oven and will re-oil it afterward.

I had Mac and Cheese tonight. But not just any Mac and Cheese. I had Southwest Mac at Cheesey Cow Mac & Cheesery!! Holy mother of god was it delicious!!

If you’re ever in the Moline area. I highly recommend going for some amazing Mac and cheese.

I realized I have shrimp, scallops and tilapia in the freezer. Sounds like it's time for some ceviche.

I sent Amy a laundry list of ingredients to pick up at work if she wants me to make it.

If you don't know, ceviche is a dish that uses lime/lemon juice to denature (cook) the seafood. You never use heat. The seafood gets "cooked" in the fridge by the acid in the limes/lemons.

Here's a pic. Crisp, clean, bold flavors. Avocado sort of messes up the appearance but it surely tastes good.

Waffles (frozen kind) smothered in syrup and a sausage link. Don’t judge, it’s the first solid food I’ve had in a week due to a stomach bug that had me sleeping in the bathroom. Hopefully it stays down/in for more than 5 minutes, I’ve lost 9lbs since last week.
