I created this recipe... based off of this one... slow cooker lovers. use this one.

Slow Cooker Chicken Parmesan with Spaghetti Squash and Balsamic Roasted Tomatoes

for me though, the chicken would over cook, the marinara sauce would become not good, and the spaghetti squash wouldn't cook right.

so.

i developed my own... and remembered to take pics this time. this is suuuper easy, and quick, and delicious, and not that many of you will care, but actually probably quite healthy for you...

....and..... this is cheap as fuck to make. entire pan cost me about 10-12 bucks and ill get a solid 12 servings out of it.

here's what I use... adjust how you want:
1-2 medium spagsquashes... i like two. cuz they're good.
3lbs boneless chick breasts
1 carton/box thingamadoo of grape tomatoes
1 jar of whatever pasta sauce your lil betty crocker heart desires
1 good amount of mozz cheese or parm, or whatever you're feelin'. I used some fresh mozz and fresh parm i had in my fridge. grate your own cheese you heathen, it tastes better, and cooks better too, and it's cheaper.
some spices and shit to make yo self feel fancy when you tell people how you made it.

I made this recipe up myself. Started with a recipe for a mango salad and added ingredients until it tasted great. Brought it to a Thai dinner I was attending tonight and it disappeared fast.

Avocado Mango Surprise

2 Hass Avocados
2 Mangoes
3 Plum Tomatoes
Green Pepper
Jalapeno Pepper. I de-seeded the pepper but you can leave the seeds if you want more heat. Make the jalapeno pieces small. It's the surprise in the recipe. Sweet and salty with a bit of heat.
Cilantro to taste. Add enough to get the cilantro flavor. Start with a quarter cup to a half cup of chopped cilantro and add more if needed. You want cilantro flavor in every bite.
1/3 medium Red Onion chopped small.
1/2 Lime's worth of Lime Juice
Salt to taste. You want a little bit of saltiness to balance the sweetness.
A few twists of Pepper
Vinaigrette dressing (this was for sweetness. If the Mangoes are sweet enough you don't need the vinaegrette)
Chop everything into bite size pieces or smaller. Combine and gently mix.

mans eggs benedict

take leftover parmesan garlic mashed red potatoes- patty them out and sprinkle with bread crumbs, fry in a skillet with just a lil oil to get the edges browned and crispy.

take leftover strip steak, slice into thin bite size pieces and set aside.

fry however many eggs your lil heart desires in a skillet and then throw the steak in real quick to heat it up and then stack eggs on top of steak on top of mashed sweet potato pancakes and ask yourself why you haven't made this for every meal ever.
