I love Bachan’s BBQ and pork tenderloin. Do you season yours at all? Before or after marinading? What do you use?
No seasoning at all, just the sauce. I was a little apprehensive but any seasoning would have been redundant. I used the whole bottle but I think that was over kill.

anyone running a controller on their charcoal smoker like a digiq or a thermoworks bellows setup? or the similar?

these entice me but their quality concerns me.
I can say they are built like tanks. Several have mentioned rusting and switch issues. It's very basic and everything very assessable to fix. This is my bridge into the world of smoking. If I can get 2-3 seasons under my belt, I will step up to a Traeger or better.

buy something for a grand that will last 10-15 years at that point.

Do people just not buy covers for these things? I have a Weber Spirit that people bitch they rust out. I've had it almost 8 years and keep it covered. There's slight paint bubble on the base but no visible rust at all. My plan was to keep it 10 years then but a Genesis and move it to the chain.

the rust reviews say the masterbuilt shit they are using covers

im guessing they use not super high quality steel and the fuckers get hot as absolute fuck

It's pellet smoker right? I bet if you kept it under 300 and used just as smoker it would be fine. I know a lot of pellet smokers are markets as a swiss army knife but my opinion is if you use them just at smoking temps, they'll last longer. The smokefire I have has a bad reputation for jamming and having grease fires. I think most of that is caused by people searing and having all the grease drip down to the firebox. But I could be wrong, I have had no issues with mine.

The yellow lookin guy is just Dijon mustard slather and steak rub + roast garlic. Both smoked with peach wood. No wrap.

Finished the yellow one with Lillies Q Carolina Gold. Other with Kosmos apple hananero.

Dijon flavor came through. Well received here. Wife thought it had a lot ot white wine flavor to it, she liked a lot. I was kind of inspired by prime rib i had done a few weeks past with dijon as binder.
