Almost. Spatchcocked turkey just fits in the smoker. Cherry wood smelling great.

Turned out very well. Totally tender and really juicy. Looks pretty good, huh?

Turned out. Lemon flavor got muted a lot in smoker over the course of the cook. No wrap. I think if i wrapped it would've preserved the tang of the lemon flavor better. I'll wrap and add more rub in foil next time. Overall, i like this rub and will use again with some onion and garlic powder to help it a bit. I think this rub would be better on pork tenderloin, fish or chicken to hold the rub flavor better. Still had some nice sour tangy bursts of flavor here and there, probably because i put the rub on so thick. Rub made excellent texture. Each bite the bark had crunch to it. Best texture ribs I've made i can remember. Two spare ribs between 3 people, no leftovers.

Also liked the citrus wood flavor. Very delicate but nice sweet smoke flavor.
