Keeping the skin on holds the filet together and keeps moisture in it. Some people eat the skin, but I don't care for it. If you cook it properly, the skin peels off easily in one piece.
I've posted this in here before, but it's worth a repost. Follow this exactly and it turns out perfect every time. This lime butter salmon is better than anything I've had in a restaurant and really easy to make.

Big issue is there are a ton of people who dont/won't eat pork...
It's like the most offensive meat..
I know Muslims and 7th day adventus people don't eat pork.most offensive meat? who you hanging out with?
