Keeping the skin on holds the filet together and keeps moisture in it. Some people eat the skin, but I don't care for it. If you cook it properly, the skin peels off easily in one piece.

I've posted this in here before, but it's worth a repost. Follow this exactly and it turns out perfect every time. This lime butter salmon is better than anything I've had in a restaurant and really easy to make.

I love doing 10lbs of wings. Bags from sams or costco. Grilled em up and sauce em. Everyone gets down on that then i start some skirt steak or smash burgers

a dumb go to of mine that i don't post pics of too frequently but pork tenderloin a bunch of different ways. buuuut must must must must must must must must must must be medium rare. which can freak people out who don't "know"

also- quite frequently on sale for cheap AF at jewel. when they are I stock up.

ill marinate one in teriyaki & soy sauce, dry rub another, buffalo sauce another, rub another in mustard, bbq sauce one, etc. slice it thin like below and let people go to town.
