Bought this last year black Friday sale, I'll be honest, it looks good but was meh. Flavor was okay but meat wasn't very tender. I'm blaming 1yr in freezer.

I have always wanted to do a wagyu brisket. That sucks it didn’t turn out how you wanted it to, but it does look delicious. A good prime brisket is already rich enough for me, I would be worried the wagyu would be too much fatty goodness for my heart to handle. Did you find that the extra fat made the meat heavy on the gut?

smoked a brisket flat today on the WSM and was pretty happy how it turned out. I did not wrap or foil it, came out tender and juicy with a fantastic bark. Pulled at 203 after about 10 hours at ~250, let it rest for an hour at room temp before slicing.

Rub was just equal parts salt, pepper, garlic, and onion powder 24 hours in advance.

This was from Saturday. I deserve like a special weber kettle eagle scout badge for temp control with over 50 mph gusts.

Second go at the from scratch apple jelly bbq sauce. Ribs were just rubbed with steak seasoning and stone ground mustard as binder. Im not satisfied. Im chasing a bbq sauce that has strong apple flavor to it, but none of the baking ingredient flavors (graham cracker, nutmeg, cinnamon). At this point its just a very nice kansas city style sauce with subtle fruity flavor.

nope, I've had way more fatty at costco, this was like horse meat :)

Favorite thing to do with leftover pulled pork. Crust, bbq and pizza sauce mix, mozzarella, pork, whatever topping you want. My wife likes pineapple and jalapeño.
We do pulled pork nachos. Break it up over Tortilla chips with all the cheeses and jalapeños, sour cream, salsa, etc
