Anybody ever smoke a meatloaf?

I did a bacon wrapped bourbon glazed meatloaf once. I wasn’t crazy about it.

Round 2 was much better. Wish I took a pic right off the smoker. Trader Joe’s hot honey is legit.

Hot honey on salmon? I have used Mike’s hot honey on ribs in the foil wrap and was a fan. I’d like to do more seafood at home but I’m the only one that eats it.

Made some ribs last week. Killer hogs hot rub, 225 with hickory and cherry pellets, spritz with apple juice once an hour as an excuse to get out of the house. My wife likes these dry rubbed ones better than the 3-2-1 styled ones wrapped in foil. The flavor is quite good considering all they have on them is seasoning and a few sprays of apple juice.

Going to do them this style at 250 next time. I liked them but the outside had too much bark. Also got some reasonably good knives today. Cutting these with a shitty dull chefs knife sucks. The 12” brisket knife I got is crazy sharp.

Been stalking a Weber gas grill (S-435) at my local Costco for the past few weeks. With the season basically over they were marking down from their regular $1300 to $1000 and then to $950. I went in for some steaks this afternoon and saw someone wheeling one out. I knew they only had like 2-3 left plus the display model.

Walked over to the grills.

Been stalking a Weber gas grill (S-435) at my local Costco for the past few weeks. With the season basically over they were marking down from their regular $1300 to $1000 and then to $950. I went in for some steaks this afternoon and saw someone wheeling one out. I knew they only had like 2-3 left plus the display model.

Went to friends of ours crib last night. My guy was grilling all kinds of shit including 3-different Waygu steaks. Each steak was $60+, and he did the usual salt/pepper on them. I was not impressed and don’t understand all the hype over this type of beef. Don’t get me wrong, they were good but not $60+ good imo. My rib eyes and filets that I get with my cow order are just as good. ??‍♂️

I say the same thing. My palette isn’t refined enough to notice whatever it is that is supposed to be so good.

I feel like that kind of meat needs to be specially prepared to enjoy it. I have grilled a wagyu steak before and it was so fucking rich I didn’t find myself enjoying it either. It was delicious, don’t get me wrong. But, I might have enjoyed it more if I had thinly sliced it and cooked it on a hot stone like I have heard some restaurants doing.

I found my lean steak limit this year. Went in with some buddies on a local grass fed cow…should have done more research because there is almost zero fat on it and it isn’t that tender even with the tenderloin cuts. I would give it away, but it is so bad I don’t want to insult anyone. There is definitely a happy medium for steaks IMO.

Been really kicking around content creation. Have had a lot of friends and family encourage me. Ive been trying to take notes, and have actual recipes. Problem is, im a bit of a perfectionist and feel like my stuff is kind of amateur compared to guys like Chuds or Hey Grill Hey. I dunno, there might be a MEATeorite bbq channel on youtube sometime in the future.

People have to remeber, there are different grades and style of Wagyu cows. The ones in the photo look good but it isn't a high grade. Based on the way it looks and the cost. And probably American or Australian Wagyu. So could a good USDA Prime have marveling like that? Definitely. I'm sure those were delicious steaks. Not knocking Shawn1112 Shawn1112 buddy at all. Especially for buying steaks like that to share. My friends don't do that haha

A high grade Wagyu, especially Japanese Wagyu, has so much fat that it looks white. I've posted a picture of the ones I won in a couple of auctions. Stole one from my but hers website below. They are so rich it's almost like eating butter. It also just melts in your mouth like butter. So when I cook them, I slice them in to bite size pieces. Then use them as an appetizer. Because they are so rich that you can't eat a whole steak like that. Even thin slices like SleeperLS SleeperLS mentioned, you couldn't eat them all. Sharing with the high grade stuff makes more sense.

I think Wagyu definitely had better flavor and is going to be moist with all the fat marbling. But I'm not going to pay the kind of priced they command. I will spend my money on a USDA Prime steak over a USDA Choice steak any day. But I think most people will feel it's deminishing returns when they compare the money to taste of Prime to Wagyu.

The going rate for this Hydgo ribeye is $200. And it isn't as thick as the ones Shawn1112 Shawn1112 posted. This is the kind of quality when people get their hair blown back over Wagyu.
