Selling homes on the Gulf Coast of Florida
Saturday! I'm going to sous vide a sirloin tip roast at 130* for 24 hours. Cut it up into chunks and grill it over high heat as the beginning of beef stroganoff. I'm expecting the meat will tenderize like prime rib. Mushrooms, onions, beef broth, tomato paste, Dijon mustard and some homemade creme fraiche I am making now. I'll serve it over buttered, wide egg noodles. Drooling already.

Finally make it to Reams. That place is a meat mecca. The beef sticks were awesome. I also picked up a hanger steak, polish sausage and a couple other things. I froze the hanger but I'll pull it out next week and try to grill it hot and fast on the kettle. We'll see how the weather is.
Please update after you have the polish sausage please.

Looking for awesome butcher recommendations basically. Educate this fool!
Mikes and Casey’s supposed to be top notch. I’ve bought ribs and a brisket from them. Never bought steak but have heard excellent things about their steaks.
