Doing another set of ribs on Sunday. The first ones came out just OK. The flavor was all there but some if it was pretty tough. I feel like they didn't cook long enough. They were at 250F for 5 hours. I think 6-7hr would have been ideal. Going for the bend test this time. I know I can do the 3-2-1 method, but I really want to get down the no wrap method.

See that's what fucks me up.... My ribs are temp and bend/break 2.5 hours in and they suck.

In general, keep an eye on the ribs. I check mine about once an hour at the start and more often as the cook progresses. You can either wrap them with a Texas Crutch or leave them out. Baste or don't baste.

The bend test is pretty good for telling if the center is done. Poking several areas on the ribs with a toothpick or probe to test tenderness is even better. The pick should go in like it's soft butter. Just a little bit of resistance.
