I think I have my holidays mixed up. This is Cinco de Mayo, right?

Slow cooker carnitas with fresh orange juice, lime juice, Mexican Coke, cumin, chili powder, etc. I pulled the pork apart and then fried it in olive oil in a cast iron pan on the grill to give the carnitas char. Once it was charred, I steamed it for a minute in some of the reserved slow cooker juice. Also fried the taco shells in another cast iron pan in oil. Thank goodness for grill gloves. Added cilantro, onions, Cotija cheese and a bit of sour cream.

I chopped up a bunch of veggies for the salsa.

I came here at trying to sell a Fiero i put a 327 small block Chevy in and some other automotive stuff. I used this place along with a bunch of other forums trying to unload stuff, liked the community here.

Sold the Fiero because it was a constant "to do" list, and i honestly do not have the time anymore. I am fortunate enough to have bought a 2016 Shelby GT350. Bone stock, and how i intend to keep it. So not much to post about it other than how nice it looks when it isnt covered in brake dust. Lol.

I always have enjoyed BBQ. Ive read meatheads book end to end twice just out of interest. Spend a lot of time watching Harry Soo and a few other youtubers. Now its more of what i tinker with instead of the Fiero. I try to lend advice if i think it helps, but I'm still learning and always trying different things. I think the thing that i like about BBQ is that restraint and patience pays off. Sometimes a little less ingredients in a rub, or a little less wood and less billowey white smoke, and a little more time on the smoker makes a drastically better result. Kind of introspective for a guy who is a bit anxious and impatient.

I'll also throw my .02 cents on anything medium/heavy Diesel truck related if subject matter comes about.

That fiero sounds enticing... I'd love something like that.

I have such a crazy soft spot for those rigs.

Ya, I enjoy the BBQ stuff so much too lately... This weber summit kettle is just amazing. I seriously started it before 6am today... I haven't added any charcoal and I haven't adjusted the bottom vent. I did two and a half "cups" of jealous devil wood stuff and it's barely used any. It's incredible.

I will be selling my traeger, my summit natural gas Weber which is a project at this point and my cabinet smoker because there's legit no reason to keep em at this point

Thanks. If I had a food truck, I think these carnitas would sell well. Adding a ladle full of the juice at the end gives the meat a ton of umami flavor.

One of my friends had two of these last night and she rarely eats half her meal so I know she liked it.

Time to get a turkey ready for Labor Day? ?

LOL! I hate it when the meat stalls at higher temps. People waiting to eat while the the meat laughs at me.

It should finish fast with the tenting. Try to give it some resting time if you can.


It's tricky too because it's hot as fuckin shit here right now... Only second time using the kettle as a smoker... The other time was 55* and pouring rain.

The other time also I used normal Kingsford bs. Right now this jealous devil stuff is going awesome

I think i posted both somewhere on the forum. I also been to a few cars and coffee up in Barrington also. Fiero was really really quick with a 327 and 5 speed. I beat the fuck out of it and never grenaded the transaxle (common criticism of V8 fiero). Id have kept it if i could dedicate the time and work to it. GT350 is really special, if you ever get the chance to drive or ride in one i really recommend it. Wife also owns a 2016 WRX 6spd.

Ive been eyeballing a summit, but am way over budget for BBQ stuff this year.

Yesterday I was manning 2 grills and my smoker. Way too busy cooking, drinking and entertaining our guests to take pics.

Smoker: 9.5lb shoulder, 3lbs chicken wings and fresh salmon fillets my buddy caught on a charter Friday.

Weber Kettle: 3lbs of chicken wings, dozen each of hot dogs, brats and burgers, lamb chops, chorizo links and 5lbs of arracherra.

Weber Spirit: Potatoes and 2 more salmon fillets

Had leftovers for lunch and dinner today

Turned out super good but I like many, forgot final pics.

What I am super pumped about is to see how much charcoal is left... I feel like there's a lot which makes me more confident in long cooks on this thing with little interaction


Yeah this is incredible. I started out with basically two times this amount of wood.... Thirteen hours before this photo.... It held 225-250 the entire time and even went to 350 towards the end. This jealous devil stuff is a high initial cost but works so well and lasts so long its likely financially worth it even. I'm a true believer for sure.... Especially because it smells good and doesn't have filler.

After waiting so long, I finally said screw it and got a smaller grill for our front patio since our rear one has been under construction. For 4 years. Just in time to move too!! :roflpicard:

I bought my mom one of those. They're great for people who aren't cooking for a crowd.
