A method i been using. I forget where i saw it first, but i use half the can of plain jane Bush's beans to catch the drippings and smoke either cubed pork belly or strips of bacon, dice up and throw into the beans. Take the beans off with the meat, rejoin and mix the uncooked beans on stove top and simmer. Add a little BBQ sauce, bourbonn and dry rub to taste. Less rather than more, its easy to ruin it by adding to much.

Ive tried a whole can of beans, they dry out in the smoker and absorb too much smoke flavor IMO.
The beans under, yum

So I won another raffle for a mystery meat box from Meat Artesian. Loaded with filet mignon, Denver steaks, wagyu New York Strip, beef bone, and duck.

Yesterday I had the duck and Denver steak. The Denver steak as the Hardcore Carnivore charcoal deef seasoning. Since the pellet grill doesn't give a pronounced sear, the black seasoning gives it a appearance of being seared since it is dark and ends up with a crust due to the seasoning.

It was my first time cooking duck. It was cooked a little higher internal temp that I would have liked. Ended up at 170 after resting. But tasted delicious.

South of Wisconsin.
the Wheels broke off the grill in the winter so I’ve not been using it. I was able to weld some studs on it yesterday and attached some wheels from a walker onto it. Looks funny but shit they were $5 each, ball bearing, and rated to hold 200 lbs. so now I can do some grilling again.

Everyone's exchange sucks, and menards got picky as hella out what tanks they fill up now.
I get mine filled by my whse for $14. But it’s a full 20lb fill as you watch them fill it on the scales. Talking to the guys there (Ashland Propane) I asked how can stores like Tony’s and other stores sell for $14-$15 and make money. He said probably 90% of stores only pay for 15lb fills which is obviously cheaper than a true 20lb fill. Made 100% sense as when I’m in a pinch and need a fresh tank for heat in my garage. Store bought last like 8-10hrs pending how high/low I have the heat. Filled tanks last me 12-14hrs.
