Smash burgers for lunch. My kitchen is full of smoke from getting the steel pan hot enough to get the Maillard reaction in the burgers. 2 1/2 oz. balls smashed flat on the hot pan so they brown across the entire burger. American processed cheese. Toasted bun. Very similar to 5 guys.

I'm going to sous vide pork tenderloin for dinner. 137* for 2 hours. Then seared on my Weber kettle grill to bring them up to 145*. I'm wrapping up some cut potatoes and carrots in tinfoil with butter and Lawry's and cooking them on the indirect side of the grill. I can use the sous vide juices to make a mushroom gravy. :bigthumb:

Some buddies of mine went deep sea fishing while they were down here and returned with some snapper and tuna. Since they can't take it on the plane, I was the lucky recipient.

Tonight, I grilled some snapper, put it over rice and grilled green beans, topped it with crab meat and a cajun, lemon cream sauce I saw on youtube. The fish was so fresh!
