Never go wrong with a classic. 1965 - 1973 will cost coin. However, 1974 - 1986 are affordable years.

Find a stock Grandma car with a solid foundation to build from.

Something with a 351, 350, 400, 454, etc in it to build from. Or a v6 that you swap in a boneyard v8

I am just going to throw my import bias projects out there.

240sx - lots of roller projects in varying levels of hacked up. most are terribly wired and sold unfinished for cheap, watch for rust as these were rusty when I was looking for one as a project in high school 15 years ago

280z- can still find a decent number that are runners or already v6 or v8 swapped

Older hondas- K swap on these is getting cheap and you can hit 250hp NA in a 2500 lb car. Make great track cars also.

Sentra SE-r can be turbod pretty easily as they come with an sr20de from the factory. Might hate how they look.

BMW E30 or E36 if you want a fun track car. They aren't quick but a classic look imo.

Otherwise you can find a cleanish shell for cheap and do the swap yourself. Everything is pretty well documented these days for how to do these. Just don't drive them into chicago if you like keeping them.
