Awesome. You won't be disappointed with those combos. Sounds like a good start to experiment with spice mixes. I am a fan of garlic, so I have just doubled the amount some recipes called for in the past.
I couldn't keep the canned stuff longer than 6 months do to the demand but they were great the whole time. They'd probably have a shelf life of at least a year easily. The most important thing is sanitation just like in home brewing. That will make or break your experience. It's pretty easy though
