How wide can our front tires go wtihout rubbing?

and what exactly is offset on rims a measurement of?

Offset is the difference between the centerline of the rim and the actual hub mounting surface. The higher the offset (+) the further in the rim will sit but its also closer to rubbing control arms and frames too.
