He said he has seen similar problems in the past and its usually wiring related.

Im 99% sure this problem has finally been solved.
After ignoring the advice from my long time Ford Tech friend, I finally put the stock converter pipes back on.
Drove it to work today and its smooth, quiet and doesnt stink.
Fuel trims looked normal when datalogging.
Un friggin believable.
