Why not do both? I usually fry two, but this year decided to smoke one of them.

My family is spread all over the country now so we're only having 7 people total. Not enough for two turkeys. I have one large bird that will be plenty big.

I do have two more turkeys in the freezer (can't turn down $6 turkeys) so, I may fry one of them for Christmas for the people who don't like brisket (I know, how do you not like brisket?).

Another hour or so to go. I'm basting it with chicken broth and organic butter. You can see the compound butter spices under the skin.
