Selling homes on the Gulf Coast of Florida
My wife is a manager at Winn Dixie (Florida Jewel). They had top round roasts on sale so she ordered one from the butcher. He gave her an 8 lb. roast that looks awesome. Cut it in half before freezing it (just too big) and can't wait to cook it up. Will probably do a natural juice dipping sauce and make a horseradish sauce as well.

So tonight was the trim and rub down. I trimmed close to 2 pounds off of it.

This is what it looks like totally trimmed out, It's hard to tell in a picture or two that I did some cutting, but I did. I also cut the real slim parts off the point and flat. The pieces that I cut off, would be nothing but charcoal. So they went buh-bye. Why waste smoke and heat on them.

Left a good 1/4" of fat around it

Rubbed her down wrapped her in foil and in the fridge it went. A good 24 plus hour soak in the rub.
