we bought that same shit (Professional). Awesome for grilling but not so much for smokers (burns to hot for my smoker)
I have a pit barrel smoker and only 1 vent at the bottom. Even closing that to almost closed, that charcoal still burns to hot. If I leave it open to where I have it with regular charcoal, temps get up over 325 lol.can't you choke it offf good enough to not burn so hot?
