Breakfast of Champions

Or, at least the breakfast a champion would enjoy. I'm working from home today so I took the opportunity to make some eggs benedict. I used prosciutto instead of Canadian bacon and cheated with a packaged sauce. It's not as good as homemade sauce but it's easier to make. If you're making poached eggs, put a tablespoon of vinegar in the pot and crack the egg into a sieve to drain the juice that makes the wisps of egg white. Perfect round poached eggs every time.

Tips for poaching eggs. The sieve works. Vinegar seems to help and doesn't flavor the egg at all. I go 3 mins. cooking time on mine.

Small glass of OJ and oatmeal usually Monday through Friday before work. Lower sugar, tasty, quick and easy.


I use more plain oatmeal and one pack of the flavored oatmeal. Just enough for a little flavor.

I dont eat breakfast when cutting, I do the 16/8 IF. So I dont eat until 10am. Today had a bowl of homemade chicken tortilla soup and a small greek salad if you want to call that breakfast
