I used prosciutto instead of Canadian bacon and cheated with a packaged sauce. It's not as good as homemade sauce but it's easier to make. If you're making poached eggs, put a tablespoon of vinegar in the pot and crack the egg into a sieve to drain the juice that makes the wisps of egg white. Perfect round poached eggs every time.
