I do as long as I dry the meat well and use a dry rub. I do pretty much everything at 225* on the extra smoke mode. It essentially keeps it at your temp +\-10* and on the warm back up swing the hopper has enough pellets in it to create a lot of smoke for about a minute then it just keep going...
