Chicken Parm Spaghetti Squash Lasagna Stuff

I created this recipe... based off of this one... slow cooker lovers. use this one.

Slow Cooker Chicken Parmesan with Spaghetti Squash and Balsamic Roasted Tomatoes

for me though, the chicken would over cook, the marinara sauce would become not good, and the spaghetti squash wouldn't cook right.

so.

i developed my own... and remembered to take pics this time. this is suuuper easy, and quick, and delicious, and not that many of you will care, but actually probably quite healthy for you...

....and..... this is cheap as fuck to make. entire pan cost me about 10-12 bucks and ill get a solid 12 servings out of it.

here's what I use... adjust how you want:
1-2 medium spagsquashes... i like two. cuz they're good.
3lbs boneless chick breasts
1 carton/box thingamadoo of grape tomatoes
1 jar of whatever pasta sauce your lil betty crocker heart desires
1 good amount of mozz cheese or parm, or whatever you're feelin'. I used some fresh mozz and fresh parm i had in my fridge. grate your own cheese you heathen, it tastes better, and cooks better too, and it's cheaper.
some spices and shit to make yo self feel fancy when you tell people how you made it.




1. cook spaghetti squash however you cook your damn spagsquash.

personally. i microwave one medium size squash, about two minutes, then i cut it in half, remove the seeds- i use a ice cream scoop because fuck you that's why. then i return it to the bitchin microwave with a lil olive oil on it and salt and pepp for about 6-8 minutes or until i can get the strands out the thing easily, but not so much that it becomes insanely tender- scoop from the long sides first and you get longer strands

2. have your chicken cooked

i grill my chicken, because it tastes awesome, and grilling is a year round endeavor, not a summer time hobby. i brine mine in salt/sugar water after pounding flat and then i grillem and then cut into bite size delicious pieces

3. okay neat, now we can do shit. grab your casserole pan- whatever you stole from your mom for this- and scoop your spagsquash out into it.

4. take your chicken and layer it on the spag squash
5. spread pasta sauce on top of chicken
6. throw your cheese on top the sauce
7. toss your halved grape tomatoes in balsamic and whatever else your heart desires and throw them on top with the cheese.

8. set your oven to stun... aka. broil. and put this beautiful beast right beneath that to make that cheese get awesome and heat up the whole thing and remove once cheese starts to brown and bubble and become awesome.

9. eat dat delicious goodness... i throw a lil salt and pepp on top... and grated parm cheese. nom nom nom.

i then eat it for leftovers because it's fucking amazing for quite some time after.

Is that the squash we ate when I was ate your place? That shit was good with whatever alfredo sauce you had. God my memory is shit. Its called spragsquash?

yeah you had spaghetti squash iirc...

its seriously so good. and healthy haha.

my favorite way to use it is as a noodle substitute in a teriyaki stir fry with some chicken.
