Haven't forayed into smoked/grilled shoulder...I feel like I need to use my sous vide more, before I get into another cooking style...

I should break out the sous vide for New Year's and cook up some steaks. I was pretty disappointed with the steak I got at Fleming's over the weekend.

I've finished by pan searing, over the grill (gas), and over a charcoal chimney. The chimney is tough because it's easy to overcook. Pan searing inside sucks because there's a ton of smoke, BUT it gives the best finish. Over the grill is probably the most consistent, but doesn't give the char of the coals or the richness of the pan sear.

I'll put a sous vide steak up against any amateur griller with a steak

@CTC DEEZUL I usually let it go until 185-190 and then rest it 20 min and then pull away. I'm almost thinking of being a real lazy shit and cutting off chunks and throwing it in the stand mixer to shred

There is a reason Sous Vide got so popular around here. It is a great tool to any cooking arsenal. It is pretty crazy when fancy restaurant steaks aren't doing it for you. hahaha

I sear on a cast iron skillet as well. The smoke sucks for sure. I use avocado oil since it has super high smoke temp. But still smokes up good.

We have been to a couple of destination weddings and thats the way to do it imo. Both my kids (24 and 20) said they are doing a destination wedding when the time comes. Like you did for the people who cant make it, throw a small party at home.

I’d still consider myself a sous vide beginner, but yeah when my steaks are holding a flame to $60+ steaks? Yeah, great way to get steak house quality at beginner level experience.

I mean, you CAN do a steak well on the grill, but it’s much much harder, and you’ll probably never match the juiciness of sous vide. I was thinking of bringing my cast iron out to the grill and finishing it off outside, but I’m worried about ruining the seasoning on my skillet, although I have no reason to be worried

My biggest issue with just using the grill was getting the internal temperature the same way time after time. Add the different thickness of meats and it wasn't gonna ever happen. The juiciness and tenderness of the steak is another great part of it. Steaks were ok on the grill. But my pork chops and tenderloins are WAY better with sous vide.

Anything that makes my life easier and gets me better results for cheap, IN.

Highly recommend trying it. The Weberís have their place, not saying theyíre obsolete or anything...Iíve got a Weber gas and a Weber charcoal I still frequently use on the deck now. And sous vide takes time and prep, not an everyday thing. Steaks generally need at minimum an hour in the sous vide, before finishing. Before the sous vide, I had gotten pretty good with a chimney sear method, but that was pretty labor intensive and required pretty constant vigilance.
