Making deer shank Osso Bucco tonight for dinner. I should have snapped a few more pics along the way. Let me get to my desk top, and I'll break it down step by step.

Ingredients:

Kosher Salt,Black pepper, 2 red onions thinly sliced,2 carrots cut into 1/3" rounds. 1 rib celery cut into 1/3" pieces. 4 cloves garlic thinly sliced. 2 tablespoon tomato paste. 1 cup red wine. 2 quarts veggie stock, tablespoon thyme, tablespoon rosemary, tablespoon sage. 2 qts veggie stock.

Take your cut pieces of shank, salt and pepper, lightly dredge them in flower and brown in a pan on high heat with some EVOO. When well browned remove and plate. Add onions, carrots and celery cook until onions caramelize. Add garlic, cook until browned. Remove mixture and put it in crock pot or dutch oven. In the same pan add tomato paste lightly brown paste while stirring. Add 1/4 cup of your wine to make aa mixture and dump in to crock, take rest of wine and deglaze pan. And everything into you crock or dutch, cover meat and veggie with just enough stock. And in your rosemary,sage and thyme. Cook until meat in fork tender. Serve of Mashed potatoes of Like I did mashed cauliflower.
