Default It's Chili Time!

I don't make this often because it's expensive and labor intensive. Have to make it a couple times a year because it's SO good.

There are around 20 ingredients to this recipe. I modified it from Guy Fieri's Dragon's Breath Chili (recipe online). Here are most of them. Notice the Yuengling beer?



Gotta have some peppers, garlic and onions in chili. Whoops. Forgot a couple red peppers. I need 4 of them.



Jalapenos? Of course there are jalapenos. With seeds. Chili needs some heat.



Gotta have plenty of meat.



Roasted peppers FTW! The bacon was cooked just to get the grease.



Here's the secret that wins chili cookoffs for me. Chuck roast chopped up to put a bite of "steak" in ever spoonful.



Used my 2nd biggest pot. No dice. Had to transfer it to my biggest pot. 2-3 hours at simmer and it will be taste time.

I double the recipe because friends and family mysteriously show up when they hear I made the chili. It goes fast.

If I do have any left after tomorrow, I will freeze it with our freezer bag machine. It tastes just as good after a month in the freezer.

Beans, Beans the wonderful fruit...

Seriously, the beans in this chili thicken the broth and add flavor. It would not be as good without the beans.

...and don't get me started on those International Chili Society snobs.

Can I make a suggestion? Ive been doing this a lot in my chili and everybody seems to love it.. Add a can of drained unsalted corn..

Interesting variation. Probably get some good sweetness from the corn?

Some people add chocolate and cinnamon for similar reasons.

Yea not much.. I use unsalted whole kernal corn.. Im not sure why but maybe the slight sweetness helps. Id give a shot once. I suppose it helps some people deal w/the spicyness?

I'm hooked on the recipe I use but it sounds like a good idea.

I control the spiciness by adding/deleting seeds from the jalapenos. Medium heat works for me and people seem to like it. This recipe has won chili contests for me where I went up against 20 other chilis. You guys know I can be full of myself at times. The chili contest people gave my wife credit for the chili rather than admit I had beaten them.

Interesting idea. my chilli always costs many dollhairs to produce. but i like to put different meats, beer, etc in mine.

mine too.

i just got to thinking one day that a price limit would be fun... that you had to produce at least 4 lbs of chili... but it couldn't cost more than 15 bucks all in (except simple shit like salt/pepper/chili powder)
