Sous vide brats

Cooking up some deer brats (1/2 pork) today....


I grilled up some onions, and mixed those and beer in the bags with the brats. Will cook them for a few hours at 140 then sear in the cast iron skillet.

Does anyone have any other recipes, or cooking times and temperatures. Im not to confident in the 140 number, just found it googling around haha.

I just did two pork tenderloins at 145 for 3ish hours (power went out so I'm not sure exactly how long it was off for, water was still hot) and they turned out perfect. I've done them lower before but they were too pink for the lady's taste. I actually finished mine on the grill after they cooked for 3 hours. Fan fucking tastic

140ish for 2-3 hours should do the trick as that'll pasteurize the center well
