It is a 3lb flat that ran $55. The Wagyu place right down the road from me is where the cows come from, but the order has to be online. They have a good bit of reasonably priced stuff on there. So far my favorite cut has been the tri tip.

The brisket turned out unreal though. Melt in your mouth delicious. After slicing it, no knife is needed at all. I could probably cut it with my finger. The wagyu is top quality and the sous vide cooking method I used was perfect. 155 for 32 hours. Pull the meat out and cool it for a couple hours. Pull it out of the fridge and dry rub it however you want. Put the grill on 250 with some wood chips on over the heat and the meat on the non flame side for an hour and a half. I hit each side under the broiler for 1 minute to crisp up the outside. Let sit for 15 minutes and then sliced it. Flawless method. It even had the perfect brisket jiggle before I cut it. I will go light on the salt for the pre sous vide rub next time. The meat didn't turn out salty but the juice did a touch IMO.

I will say that Wagyu beef is really rich and heavy. It is absolutely delicious, but it is tough to eat a lot of it in one sitting. The connective tissue and the fat was rendered perfectly using this method, so it had a almost buttery finish even though no butter was used.

I also need a good meat slicer. I just use that basic knife that I sharpen the shit out of before I cut meat. I needed a longer blade for this cut. I couldn't slice it in one swipe like I would have preferred.

I got a Shun knife as a gift last month. They are awesome. I would of never spent that much on a knife. Now that I used a good knife. I bought two more.
