Would this be a good daily driver? I'd much rather have a nice Mustang, which will be easy to work on and cheaper to own, then a luxury car... but any opinions on the 3v?

I would daily drive my 3v if it wasn't a convertible, and it didn't have so few miles on it. But I'm a huge ford swinger, and own a second car so I don't have to.
That one seems alarmingly cheap, and then I saw it had Porno red interior, has hood pins (which would concern me), looks like some lower front end damage (Cracked paint and or bumper cover), all of the stereo buttons are trashed/worn off, and is a first year model.
The 05's DO have a number of more common issues (TPS Sensor, rear Diff issues, and a few recalls IIRC), that are resolved for the following years (this is in part why I purchased an 06) just as a heads up.
I purchased mine for the exact same reasons you are looking, I wanted something newer/nicer that was reasonably cheap to own and easy to work on if need be (and I'm personally very biased to the looks/style/performance/etc).
The dashboard is honestly a "Sea of plastic", but I like the way it looks, and don't sit and stroke my dashboard, so don't really care that there are few 'soft touch' plastics in the car.
As far as daily driving it, you may get annoyed with certain aspects, Namely the complete lack of easily accessible cubby space (Door pockets are worthless, and the console storage is awkward to reach into, especially while driving, and is not especially large), and the cupholders being worthless for anything except regular soda cans in a 5 speed car (Positioned DIRECTLY behind the shifter, which is VERY short, and has very little height over the console. Also, if the car you are looking at being a premium (as is mine) has Aluminum or metal steering wheel inserts that get REALLY fucking cold in the winter which can be obnoxious if you rest your hand on one of the spokes while driving. This doesn't bother me since I drive my explorer when it's crappy out, but something to keep in mind if you plan on driving it in winter.
MPG wise, if you keep your foot out of it, I was getting 21-22 in town, 27-28 on the highway. Driving more spiritedly nets me 18 in mixed driving (mostly in town).
If you pull the trigger, I'd recommend doing what I did, and buy a storage tray or bag for your passenger side seat when you don't have any passengers, or to toss on your rear seats if you do. This way you have a place to act as a catch-all, otherwise you will be constantly looking for a place to put your phone, or bag of potato chips, etc, down on.
Common things to look for on an 05 would be hood lip rust/bubbles, TPS Sensor (Car going into limp mode/CEL's), and rear diff whine.

As far as winter driving goes, the stock tires are SUCH garbage (mine still has them), can hardly drive it in the damn rain, and I'm far from an idiot driver. As mentioned, snow tires would do it wonders, but be aware that S-197 mustangs have a taller tire, and different rim offset than the 99-04 mustangs (which makes it harder to find a cheap used set), so if you buy snow tires/rims, be sure they are the right size.
