I've got SC oil leaking by the pulley (it's leaking down to the intake manifold and splattered on the hood.)

Is this just a matter of replacing the snout seal? How hard is it? Etc.

It depends on how bad the leak is and how much, if any oil is left in the snout to protect the bearings. If it is minimal leakage, just replacing the seal should be OK. if it is massive/catastrophic seal failure/leakage, the bearings should be replaced.

as far as difficulty? if just the seal, remove pulley, then remove seal with seal puller (or if careful, a good long screwdriver)
if replacing the bearings, you'll need access to a bearing press and have to remove the snout from the car....
