Dude, I love your ongoing grilling saga. You are committed to grilling! I thought I grilled a lot but you do more and you're in Chicago.

I did grill T Bones that my son bought today but didn't take pics. Pulled them at 135*, rested them and they ended up a nice medium rare.

Always nice when your kid comes home with steak.

Gentlemen....
I can't stop thinking about steak.

The salt method I learned in this thread is spot on..... Salt it up, let it sit in fridge wrapped in aluminum foil for 24 hours before.... Delicious.

i don't even wrap mine though. I just put em on a rack salted for up to 24 hours.

i have friends ask me what my marinade consists of... they don't believe me when i tell them i just salt.

Weber grills FTW. I know they are double the money but they are more than double the value. Temperature regularity, replaceable parts and grills that don't rust out after two years.

I bought my Genesis slightly used from the family of a guy who died for $400. New, it's $700-$800. It's seven years old and will probably last at least seven more. So far, I have only replaced the flavorizer bars and grills for around $75 total. It's my fault because I don't cover it and water gets in at times. If I covered it, the old bars/grills would probably still be good.

There's a Weber facility just down the street from me. My brother knows somebody who works there and gets some chips, thermometers and a bunch of other stuff for real cheap or free and gets good discounts on grills.
